Today's lazy Saturday morning breakfast is a skillet full of eggs, potatoes, onions, and a bit of pepperoni, seasoned wih salt, pepper, garlic, cayenne, and parsley. Yowza!

Cheese came later, when I received a request to serve breakfast at around 8:00pm.  Spinach and cheddar omelettes were made.  (Personally I prefer spinach and feta, but cheddar was what I had in the refrigerator.)

But what I really want is empanadas.  Soon.

Sure. we could've done cheese and eggs and meat I believe. Eggs might need to need to be cooked a bit beforehand.
