As a board-certified Italian grandmother, I know the truth: great parmigiana begins with great schnitzel. (But we'd never use pork; only chicken, veal, or eggplant.)


Aaaaaaaaaaaand now I want some. I think there might be one little piece left in the refrigerator. I wonder if I can stretch it into a reasonable lunch.

I had a scoop of ice cream ( cookies and cream ) a caffeine tablet and a Excedrin migraine pill.  

That count as reasonable?

You might as well count it as reasonable. I ended up not eating the schnitzel because my daughter got to it first. So I had tuna salad (always a hit with the cats, who get some tuna before I make the rest into tuna salad).

I'm trying to cut (but not eliminate) carbs, so I tend to go with whole wheat wraps instead of a big roll these days. Or sometimes if I have tomatoes on hand I'll just do the gourmet thing and stuff the tuna salad into a tomato.

On the advice of a friend who had a lot of success with it, I'm also trying 16/8 intermittent, in an attempt to reduce my blood sugar. And because of that, I've finally trained myself to drink black coffee. I tried and gave up many times before, but with it now a necessity, I kept it up ... and yes, I'm starting to enjoy it. What they say is true! If you've been drinking it light and sweet your whole life, black coffee seems bitter at first, but after a week or two ... I now enjoy every cup at least as much as I did before.

Also I have an electric cup warmer on my desk and black coffee works much better with that.

whoohoo, first real test of my new bread machine = success.

I have mentioned it before but i make Shokupan bread, in Pullman pans.  I use a bread machine for stir/kneading as my hands just wont hold up now. But all baking is in the oven. Recently got a larger Pullman, but the little machine just could not do that much dough at once, so finally spring for a huge one.  First couple of loaves i chickened out and made normal sized ones with the small pan..  But today...

Thing was able to handle nearly 5 cups of flour, + all the milk and stuff that goes with it.  I am impressed.  

and since 'pictures or it didnt happen'..  Bottle of spray for scale  .. and ignore the taped up thing behind it, that is a heating pad on my crab 'tank'  no real good way to keep it on.

A bowl mixer works too, and can do more.

Only reason i like the bread maker for stirring is its an enclosed box, good to keep the moisture and heat in.

That's a very SQUARE loaf of bread. :) It looks very industrial. But I'm guessing it tastes better than it looks.

It tastes like home made Shokupan, so if you like that taste, its fine.  Having it in the pan makes it uniform in size, for sandwiches and things, which is the only reason i want 'loaf bread'. The box wont effect the flavor any.

Blah.

almost new bottle of wild turkey ( i dont drink it.. its mouthwash to kill pain when i bit my tongue, or lip.... long story ) Since i dont drink, it its stored down below cabinet level. but fell out of the cabinet about 1 foot onto linoleum as i was fishing out some plastic bags. Totally shattered .. Not even just break, but shattered everywhere.

 

They dont make bottles like they used to.

Bit my tongue Friday, so bought another this weekend, and it promptly went into a plastic bottle. I do actually learn from my mistakes. :) 

 

And also feed related ( yes, that was intentional ) seems like its going to be fake lasagna for lunch. ( home today working.. so i get to eat )

This week, I tried "St. Louis style pizza" for the first time.

Meh. Obviously as a New York pizza snob I did not expect to have a religious experience. The best I can say is that it isn't Delaware pizza. The crust was limp and uninteresting, the sauce bland, and the signature ingredient in St. Louis is "Provel cheese" which is made by squashing cheddar, swiss, and provolone together and then re-extruding it.

Yeah. It's good to be home.

Tyson foods working with a bug based protein company to make pet foods.

No thanks.  While i do realize its 'natural protein' and my pets will eat a bug or two on their own ( especially flying raisins ) and it wont 'hurt' them, id rather it not be a staple of their diet. Standing along side us, they evolved for red meat protein. Not bug.

Over the year-transition break I made a pot of chili using a recipe LoanShark sent to me a couple of years ago.  It's the second time I've used the recipe.  It's good.
