Cascade Lodge Citadel will be offline for the next few days - replacing hardware. Everything should be back up and running by (hopefully) Wednesday evening.

Ahhhh.... 9am here on the west coast.
About 60 degr; clear sky; great forecast for the next week+ !!
Visiting in Auburn CA (about 100 mi from Cascade Lodge!).
Breakfast being made as I speak.

Around here it's a pretty common urban legend. It's widely believed that one of the things that makes New York bagels and pizza vastly superior to everywhere else is the water supply. Everyone seems to "know of" a bagel or pizza shop (usually in Florida but I occasionally hear California too) where the owner has tanker trucks of New York municipal water brought in so that authentic tasting dough can be made.

H&H bagels were shipped to Israel half-baked at one point (or boiled but not baked?) 

the local bagel shop seems to have figured out how to make real bagels. I haven't had an American one in many years, so I don't know if I can compare, but it's not obviously awful - which all the bagels were when I got here.

Universal statement:

If you want to get authentic $ETHNIC food, you have to get it in New York.
It isn't any good anywhere else, including $ETHNIC_COUNTRY_OF_ORIGIN.
