Doesn't matter though; mice don't last long in my house because I have cats.

Around here, a leftover turkey sandwich gets made with those luscious slabs of white meat along with avocado, bacon, mayonnaise, lettuce and tomato, and horseradish. It does not get any better than that.
I like mine with gravy and mashed potatoes.

I saw a compelling argument that turkey is not a very tasty bird, and that it is mostly cooked poorly - but we eat it for a nostalgia kick.
I've got to admit - I'm not a fan of the smell, in particular, of turkey. It is also kind of a weird mouth texture. Chicken is better.

I've noticed that the larger a food gets - the less flavor it has. Grapes are often this way.

Anyway, if you've had dry flavorless turkey, you're eating Grandma's thanksgiving bird that came out of the package and went straight into the oven for six hours until the built-in timer popped. That is a hopeless barren wasteland of dining.
If you want delicious turkey, you have to brine it. I make my brine with salt, brown sugar, and spices like cloves, peppercorns, allspice berries, and even some fresh ginger. I boil it for a while to release the flavor from the spices, then cool it down and dunk the turkey into it overnight. Once that's done, the moisture doesn't come out when you cook it, and the flavors have been infused as well.
The oven is fine, but this year I smoked two turkeys and they were even better.
Oh... my father-in-law brines it, smokes it, seasons it, it is juicy... and the dark meat is pretty good.
But... after all is said and done - it is still turkey. It is best mixed in with mashed potatoes and gravy, cranberry, stuffing, or whatever else there is on the plate to make you forget that you're eating turkey.

My brother mostly will deep fry it in the driveway.
IF we have it here at my house, its just one of those small packaged breasts, a bit of instant potato, perhaps some cooked carrot ( ick ). Normally we dont bother. Wife works holidays, i'm not really into them ( as if that is a surprise :) ). If we "do" holidays we will go to family and eat their food, tho neither of us are fond of traveling to parties either.

My wife has turned it into this obligation to buy her something while at the same time she just constantly shops on Amazon so there is *nothing* she wants.
She wants me to pick out clothes - in her size, that she'll like - when she thinks I can't even dress myself. Or jewelry or purses and handbags or candles. All things I have no interest in.
Every year, for 28 years... I fail. I feel the same way about her birthday and our anniversary.
It is the one thing about her - she has robbed me the joy of these seasons.
