They know T/NPUs are going to eat them for lunch in the next few years, and are gearing up for the fight. ( and removing future competition, intel was making them too ) even NVIDIA is starting to include pieces of them in the high end GPUs now, they know its coming.

I don't even have the ice maker plugged in on mine. We have a small stand alone unit that sits beside the sink. it has one button. On/Off. Will run it every so often and put ice in the 'bucket'. or just grab a bag at the local store, its cheap enough.
My gas stove, does not even have a display, digital or analog. My convection oven, still has a mechanical spinner timer.. My furnace, i refused a smart thermostat. Just found out that i can still get mechanical ones. I may see if i can adapt one...
Latest water heater, while it has some simple electronics inside it to control/monitor the water pressure, temperature and gas and stuff, its not connected to anything, nor can it be.
Only thing i can think of that is 'smart' in my house, is some of my lights. and they are running on tech that is a good 45 years old. NO internet nonsense. X10 devices. And most of the devices are ~40 years old, only thing newer are a couple of the remotes, and an IR sensor, and they are 25 years old.
My clothes washer, mentioned before i had to swap out for new one as the transmission died. and parts were 3/4 the cost of a new one. Took me forever to find one that wasn't BT/Internet/whatever. Dryer, nope, just a couple of dials. Have had to rebuild it a couple of times now, just to avoid new garbage.
Oh, and my TV.... no internet for it either. If it dies and i cant find a 'dumb' TV at that point, i'm buying a monitor.
Next year i may start up on that project to yank the ( limited ) computer out of the little car.. To do the jeep, i have to to swap out transmissions, but i prefer an automatic for the back woods. It comes in handy to have it in low gear and hang out the door and steering at the same time. hard to do that futzing with a clutch. But at least its minimal, none of that digital dash/display crap.
Oh, and my watch? Some swiss auto wind thing. I forget the brand. its steampunkish.
And ya the older i get the more annoyed i become with it all. I totally agree that computers, and networking too, have their place. But its NOT everywhere and in everything. Mechanical items are still appropriate for most things. And i still say if i end up living longer than my wife, its back to the woods for me and i'm going off-grid, except perhaps to pay bills, since some places wont accept a check anymore, and that will only get worse.

I get that too. Mostly they're bells and whistles. They're creeping into cars too. My cars can park themselves, and I can turn on the venting from an app on my smartphone. You would think this would be a huge benefit in Phoenix - but I always forget to do it - or more often, it returns a failure to communicate.
Same thing with Android Auto and Airplay. Every update that gets pushed down breaks things. I never drove in silence because my Pioneer suddenly couldn't read cassette tapes.
My wife's car has a lot of the fancy stuff, and eats thru batteries like no tomorrow. And if the battery is even slightly low, you are screwed since the computer takes too much power and it wont start. AND the battery is inside the wheel well up under the wheel behind a panel.. idiots. a 5 minute trivial job is now a nightmare. And its always flashing things on the screens, beeping.. I refuse to drive the thing. Its no wonder people crash more often these days. They are distracted and its not even their phone in their face.
And if its cold out, it bitches "car is not in park", um, yes it is, if it wasn't we would be moving..
The location of battery reminds me a bit of my mother's car, years ago. They replaced a 5 dollar fuse box with a 500 dollar computer module. Which went out 2x in 3 years, and totally disables the car. 2nd time, car was sold. F-that.

I'm getting even more paranoid lately. Yesterday I deleted my X account (even though Elon was kind enough to unban me when he took over) and I'm in the process of deleting every comment I've ever made on youtube videos for the last 20 years ... simply because at this point in my life I can't afford to be canceled by an OSINT sniper.
Thankfully the BBS flies below the radar.
Year or so i wanted to do the same, for similar reasons. But doing it by hand was too much. I deleted the 'channel' ( but not my account ) and that did it all at once.
Now, if i comment, i go back a few days later and remove them. Much more manageable.
