People starting off their youtube videos with "hey guys"

yup ... instant declaration that you're an amateur.  "Hey guys" (or "What's up, YouTube") followed by "I thought I'd make a video about..."

Honestly, unless you have an opening title sequence, ANYTHING you start a video with is going to sound tacky.

It can be done. https://www.youtube.com/user/bigclivedotcom is one of my favorite YouTubers and a great example. He doesn't greet or sign off, he just says what he has to say.

Many people say "I have always wanted...." to do something they wanted to do for about a month.

 

My niece who is in her mid 20s has unknown to any member of the family "always wanted to travel".  She along with her current boyfriend have started traveled adventures. No mater what area is mentioned she says she they have always wanted to go there.
