Of course, after saying that - I feel down the rabbit hole of the HTC Vive and Assetto Corsa.

With my steering wheel and driving seat setup - driving simulation is the kind of use model for where VR makes the MOST sense. Something where YOU are stationary.

It is incredible. I took my times on the Nürburgring down from about 8:47 to 8:24 in an M4, and took OFF racing line and added "factory dynamics, gas and tire wear, and crash damage"... so I'm driving with less assists and getting much better times. You know how people always complain that driving simulators don't convey an accurate sense of speed? VR largely fixes this. I actually get a little nauseous on some of the elevation changes in corners. The visual feeling is super authentic, and your body responds by telling your eyes, "this is a LIE!"

Also, to keep this on topic, I made my spaghetti for the family yesterday. It is an all day affair... from semi-scratch. My wife's idea of spaghetti when we first got married was to boil some noodles al dente and then throw some sauce on after the noodles were cooked. It was *maybe* a step up from Chef BoyArDee. So, for years I complained and she responded, "if you don't like it, make it yourself..."

And finally I did. My mother never *taught* me her recipe - but I watched her enough, I guess - that I come pretty damn close... and my kid loves it. She is considering taking a frozen bag of the sauce back to the dorms in Chicago with her.

So... food...

Now, you need to start making the noodles from scratch too.

We do that here, sometimes.

Mom's started with Ragu and cheap noodles.

Mine is a bit more upscale at the start - but the end result is going for the same experience. It is better as leftovers, after the sauce has had a change to soak into the pasta.

Often times i cook the pasts IN sauce, instead of water.

It's hard to succeed when you start with something like Ragu. It has too much sugar in it.

As a board-certified Italian grandmother I feel it appropriate to speak authoritatively on this subject. You have to start with tomatoes. They can be fresh or canned, whole or pureed, but you absolutely have to start with just tomatoes. Attempting to doctor up a jar sauce will result in something that tastes like a doctored up jar sauce.

I can post my recipe and method if you want, or you can come over for Sunday dinner.

it is too bad we all live in different parts of the country ( and in a couple cases, world. ).

That was one nice thing of the old BBS scene, many users were local and made board parties an option. ( or fights, depending on the area and how well everyone got along )

Yes, it is a title conferred unto my by *my* Italian grandmother. You don't have to be female, or have grandchildren, or even be Italian. I am only one out of three, hopefully two out of three someday, but the point is ... being an Italian Grandmother is about food and love. Buon cibo, buon famiglia, buon amici.

And as was pointed out above, one of the things we lost when online communities stopped being local, was the get togethers. If y'all were not a bunch of anonymous names on the Internet I would invite you all over for Sunday dinner.

Actually I have tried to invite some Internet buddies to events, but it gets hard when everybody is from a different corner of the world. When one actually makes it it feels like a groundbreaking success.

Decades ago, i was friends with several people from Sweden  ( IRC ). One of the guys decided to make a tour of the US one summer.  Would go from house to house, spend the night, and we would drive him to the next person closest.   Got to meet several people that way. ( around the same time they also sent a camera around the planet.. "take a picture and send it to the next person"  took months.  I wish i had saved the images now, the group has long since disbanded and the site is gone. and none of us keep in touch now. )

Year or so later, my wife at the time came to my room, "there is someone here to see you"  it was a dude from Australia.. had to look twice to be sure i was really seeing him.  ( and another local IRC person who i did know standing behind him giggling ).  He did the same thing, however he didnt announce it to the next person in line and everyone kept it a secret until the end, so it would be a surprise.

I'll put mine against yours in double blind taste tests...

And you'll be disappointed with the results. :)

I don't "doctor up"... I build excellence from an available base.

My daughter actually took a frozen bag of the sauce back with her to Chicago for this semester in her checked bag... I'm curious what the TSA made of *that*.

I'll tell you what they made of that. They made dinner out of that. After confiscating it.

Nah. It made it, along with a prepack of Chicken Marsala.

I didn't think it would, either. But it did.

Believe it or not, I've never made chili. This changes today. I'm using a recipe that LoanShark sent me a couple of years ago. This is long overdue!

I've already made a few changes, so I hope I didn't ruin it. Instead of cubing the meat, I brought it down to a rough "chili grind" with the food processor, because I like chilis that have the meat cut that way. And I'm simmering it in a crock pot instead of my dutch oven, because I'm going to be grouting the new backsplash I put behind the kitchen counters and I don't want food anywhere near it.

The house is going to start smelling good soon...

I do the opposite.. the recipe says 1/4 cubes or maybe 1/2" or something. I go for 2x2" big savory chunks.
